Papaya

The papaya originates from North America. The flowers and fruit grow from the axils of the leaves and the fruit is classified botanically as a berry. The skin of an unripe papaya is yellow, ripening to a golden-orange hue. A cell which contains the seeds lies at the centre of the fruit. A ripe papaya has an amber blush to the skin and yields when pressed gently. The fruit can be kept in a refrigerator for up to a fortnight. It is a superb ingredient for desserts and fruit salads, it has a flavour somewhat similar to that of a melon and is thus often used as an addition to ham and crayfish dishes. To prepare a dish using papaya, it is best to first peel the fruit, then halve it lengthways and scoop out the seeds with a spoon.
