Chaource

This traditional cheese, with its bloom of white mould, comes from the Champagne region of France. When young, it has a milky-coloured rind that is only beginning to develop, while, on a more mature cheese, the rind will be thicker, with a developing red mould. The flavour is sweet, with an undertone of fresh fruit. Although, in general, Chaource is best savoured at the end of a meal, it also makes an excellent appetiser when served with a fruity champagne or sparkling wine.
