Insalata Caprese

  • 10 cherry tomatoes
  • 8 small mozzarella balls
  • 8 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 clove of garlic
  • a few leaves of fresh basil
  • salt
  • freshly ground pepper

Directions:

For the dressing: gradually mix the lemon juice with olive oil and crushed garlic until smooth. Season with salt and pepper. Cut the tomatoes in halves and in quarters. Arrange the tomatoes and mozzarella on a plate and garnish with leaves of fresh basil. Spoon the dressing over the salad and season with freshly ground pepper to taste. Serve with crispy bread.
