Spinach

Spinach originated in Persia, but has been a feature of European cuisines since the 10th century. There are four seasonal varieties, which are strictly connected with the seasons of the year. The delicate leaves can be kept only  for a short time in the fridge and are thus best eaten either on the day of purchase or the following day. Its culinary potential is a constant delight: it is a perfect addition to a pizza topping, an ingredient for a pungent pesto or a delicate sauce, an accompaniment to meat dishes or a filling for pierogi or cannelloni.
