Italian risotto with vegetables (6 servings)

  • 320 g rice
  • 1 l hot broth
  • 1 medium-sized onion, finely chopped
  • 40 g butter
  • 1 glass white wine
  • freshly grated parmesan cheese
  • optional ingredients, e.g. slices of zucchini, peppers, asparagus or green peas

Directions:

Fry the chopped onion in a saucepan until translucent. Add the rice. Pour in the wine and stir until the wine evaporates. Add the hot stock. Cover and simmer over a low heat for 15-20 minutes, stirring occasionally, until the rice softens and becomes tender and creamy. Add the vegetables. Scatter Parmesan over the dish at the end. Season to taste. Leave covered for 2 more minutes.
